Describe your efforts to include local sources in your products.

We go to great lengths to work with local farms and suppliers. Over the last four years, we have doubled our production and distribution of local goods year over year. We have included produce from R Farms, Coates Produce, Moss Farms, Johnson Family Farms, Sandy Bottom Farms, Edmundson Produce and individuals in and around Haywood County. We otherwise use Mountain Food Products and JMJ Tomato. We prepare everything from start to finish by hand. We work out of the WNC Farmers Market, where we take the freshest produce possible and bring it over a hot brine, place it under a refrigerated bladder for several days, and then have a product that keeps color, crunch and freshness for approximately 5 months (refrigerated). We work with local farms to also source specialty items. Last year we pickled strawberries, ramps, bamboo shoots and more. We are in conversations with Pocock Farms, Heath Retreat and are interested in furthering this value.

We also work with business retail partners, such as Christopher Farms, local cheesemakers like English Farmstead, and local wineries/breweries. We work with WNC Farm to Table, Grateful Table, and other businesses such as 828 Market, Well Seasoned Table and others as well.
